2. An Awesomely Delicious Recipe from my Kori: Kori and Daci have been here visiting this week (which has been heaven for this grandma) and a couple of days ago she made all of us dinner. This Chicken Tortilla soup recipe is so scrumptious. It is sooooo yummy. I think I could easily eat about 4 helpings in one sitting! Since I haven't shared a recipe in quite some time, I thought it was about time (stay tuned for 2 more recipes this week!) The photo I shared at the beginning of this post is not the best photo, but I was in such a hurry to eat it that I didn't take the time to set up a beautiful presentation before I took the pic. It is delicious (and so pretty) with some chopped tomatoes, chopped green onion, a little ground pepper, tortilla strips and monterey jack cheese sprinkled on top. On to the important part: the recipe...

Chicken Tortilla Soup - serves 8-10 (from the kitchen of Kori Roberts and Penny Roberts)

1 Rotisserie Chicken (remove chicken from bones and shred)

1 lg. onion, diced

2 sticks butter, unsalted

8 tbs. flour

4 C. chicken stock

4 C. half and half

2 tsp. tobasco (Kori likes the green tobasco)

2 tsp. chili powder

2
tsp. cumin
2 tsp. salt

2 tsp. pepper

2-16 oz. cans of cannelini beans

2-8 oz. cans of chopped green chili peppers

1 C. shredded monterey jack cheese

1 C. sour cream

2 C. chopped cilantro
  • chop onion and cook in pan with 4 tbs. butter until soft and transparent
  • remove onion and add 12 tbs. butter at medium heat
  • whisk in flour and continue to whisk for about 3 minutes. Add onion, chicken broth and half and half
  • bring to a boil and simmer until thickened
  • stir in seasonings
  • add beans, chilis, chicken and cheese
  • cook for 20 minutes, then add sour cream and cilantro
