Kori and Daci just left to go back home to Chicago. After shedding some big crocodile tears, I decided to 'get over it' and catch up on blogging. I have been a bad, bad blogger while the girls were here. I promise to do better this week in reading and commenting on all of your blogs, as well as adding regularly to mine.
Today I thought I'd share a wonderful recipe of Kori's (which I think she got from her mother-in-law and awesome cook, Penny R). It's called Salad de Maison. She makes it for us every time she is here for a meal, and has even agreed to make it for 150 people in December at Easton and Daysha's wedding lunch. Yum! It goes so well with almost any main dish. We had it with pot roast, carrots, potatoes, and rolls last night but we have also had it with several types of chicken, pork chops, etc.
After the recipe below, you can see some photos of the adventures we have had the past week with Kori and Daci. What fun and wonderful memories we created this week!
Salad de Maison (serves 8 as a side dish)
2 C. romaine lettuce, washed and torn
2 C. cherry tomatoes, halved
1 C. swiss cheese, cubed
1/3 C. parmesan cheese, shredded
1/4 C. cooked bacon, crumbled
Dressing (Kori says she thinks the dressing is best if made the night before, but make it at least one hour before pouring on salad):
3 Tbs. lemon juice (fresh is best!)
1 Tsp. salt
1/2 olive oil
3 cloves garlic
1/2 tsp. pepper
Pour dressing on salad and toss just before serving.

We have had such a great week together. We all went down to the Southern Utah University football game in Cedar City last weekend. Easton is redshirting due to injuries. He currently has a torn labrum in his shoulder. Tannon also has a scholarship there for after his mission. It was fun to see both of those boys down on the sidelines together.
Kori and I loved having some girl-time shopping this week, scrapbooking, and just chillin'. We even had to buy another suitcase so she could get everything back to Chicago (Sorry, Rick!).
Easton came up for the weekend yesterday and we enjoyed an evening of family time last night with all of our kiddos, our beautiful granddaughter, my parents, and Easton's fiance, Daysha.

just got to say that 'lickin' the beaters' is a right of passage in childhood! LOVE IT! It's our THANKSGIVING here this weekend and I am thankful that you share your passions with us! Happy (CDN) THANKSGIVING KAREN!
I had such a blast being back home with everyone! Daci was in heaven with her family and was sad to leave. I think she might be a little bored this week as she tries to adjust to her less busy life :) Love you!

That salad looks YUMMY! I am so glad you were able to get your whole family together! Daci is just getting to big. What a sweet heart. Oh as a side note her hair is coming is so dark. Very cute!
