Deviled Eggs

I promised 3 recipes this week, and
this is #3. My family LOVES deviled eggs, and they especially love them while watching the Super Bowl. So, along with the other 'feast items' Kori and I made last Sunday, we made sure to make a double batch of my family's favorite deviled eggs. The recipe I use started out as the recipe from the famous Salt Lake "Lion House" but I have adapted it a little bit here and there over the years until it has come out 'just right' for the Pedersen taste.

We like ours with a little kick, so you'll notice we use a little miracle whip in with the mayo, and there is also a little bit of tabasco in there too.

Deviled Eggs - Karen Pedersen
Makes 12
(I usually double the batch so that we have 24!)

6 hard cooked eggs
1/8 C. mayo
1/8 C. miracle whip
1 tea. white vinegar
1 tea. prepared mustard
1/8 tea. salt
Dash white pepper (you can use regular ground black pepper, the white just keeps your filling from having little black specs in it)
1/8 tea. worchestershire sauce
a couple of drops of tabasco sauce
paprika

Peel eggs and cut in half lengthwise. Slip out yolks and mash with fork in small mixing bowl. Add remaining ingredients (except paprika) to yolks and mix until well blended (no lumps!). Either spoon or use a food decorator to squeeze mixture into egg white halves (I like my food decorator!). Sprinkle with paprika.

Just for fun, I thought I'd share a few more photos from our Super Bowl Party last Sunday. When the kids were little, we invited lots of friends, but as they got older we really just started enjoyed having mostly just our family. This year we added a few extras, but it was mostly just us.

Dan and Daci decided to just park themselves at the buffet and pig out. Notice Daci is not wearing a shirt.
When Grandpa Dan is in charge, that is the solution to not being able to find a bib:
-----------------

Dawson just chilled on the couch after stuffing his face. Notice that no matter how 'chilled' he gets, the phone is always close at hand. Essentials, essentials!:---------------

Kori and her cake masterpiece:
---------------------

Easton even got into the frosting act with Kori. Of course an apron was needed:---------------

Daci insisted that Bear needed to watch the game too. Grandma was happy to oblige:------------------

The newlyweds in their newlywedded bliss:

We missed Tannon on his mission and Rick who had not yet arrived from Chicago at our party. After the game, Kori and Daysha decided that Daci needed her fingernails and toenails painted for the first time. Girl Power!

Ribbon Tutorial (video) and Another Recipe (Gluten Free)

Here is another great video tutorial from the Close To My Heart Art Department on ideas with our new Pink Collection of Designer Ribbon. LOVE it! I've been having so much fun with this designer ribbon. I will actually be posting a layout that features it (created by the oh-so-talented Lisa Stenz) in a couple of days. So, be watching!

In the meantime, take 2 quick minutes and watch the great ideas and tutorial in this quick video:

To order the ribbon, click here. The item numbers for the supplies used in this video are:
Pink Collection Designer Ribbon - Z1384
Pearl Opaques - Z1336
Glitter Glue - Z1313
Sweetheart Level 2 Paper Pack - X7134B

I also promised a recipe, and I always keep my promises! This one is for Gluten-Free Stromboli. Kori and I made it for the Super Bowl since we had 3 people here who have Celiac Disease. They all loved it. Thanks to Lisa Hannemann (Daysha's mom) for the recipe! You could also do this recipe with regular pizza dough if you don't need to do gluten-free at your house.

Gluten Free Stromboli (makes 2 - 10" Stromboli Loaves):
from the kitchen of Lisa Hannemann
  • 2 bags of frozen gluten free pizza dough (photo shown of brand we used, or you can make your own) - let thaw and rise until double (leave in bags until ready to use). We bought our dough at a local healthy food market.
  • 2 eggs, beaten
  • 1/2 tsp. oregano
  • 1/2 tsp. parsley
  • 1/2 tsp. dry mustard
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. ground sausage, browned and drained
  • 1/2 lb. shaved ham (deli-sliced paper thin)- be sure it's gluten free!
  • pepperoni slices
  • 2-3 C. mozzarella cheeze, grated

1. Roll out each pizza dough loaf into a 12" x 10" x 1/4" rectangle. The dough is very sticky so be sure to spray your marble rolling pin and the rolling surface very generously with gluten free cooking spray
2. Brush with ingredients 2-8 mixed together (leave some to brush on after you roll them up too)
3. Cover each rectangle with pepperoni slices, then sausage, then ham, and finally with grated mozzarella cheese.
4. Roll up on 12" side like cinnamon rolls. Tuck ends in and put on a greased cookie sheet (seam side down)
5. Brush with remaining mixture
6. Cover with plastic (spray the side of your plastic that will be against the dough with gluten free cooking spray) and let rise about 20 minutes
7. Remove plastic and bake at 350* for 20-30 minutes

Delish!

*************

1. First Things First: How to join my team and sign up to be a Close To My Heart Consultant for FREE during the month of February only: Yep. You heard me right! I did say FREE! Becoming a CTMH consultant in 1/1993 was one of the best decisions (outside of marrying Dan-the-Man and having my 4 beautiful children) that I have made. Because I LOVE what I do so much, I want to share it with everyone. And, this month is BEST time to do that. Let me tell you how you can do the same thing I did 18 years ago for FREE! When you sing up to be a CTMH Consultant during February and achieve Straight To The Top*, you will receive a cash rebate of $129 on your New Consultant Kit, plus $100 in select product credit rewards. That’s a value of about $500 in products and rebates for FREE! *Straight to the Top is CTMH's AWESOME 'get started program' that helps you to earn a cool $300 within your first 90 days. I personally recommend you choose kits #1 and #2 and then either kit #3 or #4. If you do that you have EVERYTHING you need to be successful straight out of the gates. I have included photos below of the basic kit plus all 6 of the "choose me" kits below. Again, you get the basic, plus 3 of the "choose me's" for the $129 (which you get back in a cash rebate when you hit that Straight to the Top I mentioned).

2. An Awesomely Delicious Recipe from my Kori: Kori and Daci have been here visiting this week (which has been heaven for this grandma) and a couple of days ago she made all of us dinner. This Chicken Tortilla soup recipe is so scrumptious. It is sooooo yummy. I think I could easily eat about 4 helpings in one sitting! Since I haven't shared a recipe in quite some time, I thought it was about time (stay tuned for 2 more recipes this week!) The photo I shared at the beginning of this post is not the best photo, but I was in such a hurry to eat it that I didn't take the time to set up a beautiful presentation before I took the pic. It is delicious (and so pretty) with some chopped tomatoes, chopped green onion, a little ground pepper, tortilla strips and monterey jack cheese sprinkled on top. On to the important part: the recipe...

Chicken Tortilla Soup - serves 8-10 (from the kitchen of Kori Roberts and Penny Roberts)

1 Rotisserie Chicken (remove chicken from bones and shred)

1 lg. onion, diced

2 sticks butter, unsalted

8 tbs. flour

4 C. chicken stock

4 C. half and half

2 tsp. tobasco (Kori likes the green tobasco)

2 tsp. chili powder

2
tsp. cumin
2 tsp. salt

2 tsp. pepper

2-16 oz. cans of cannelini beans

2-8 oz. cans of chopped green chili peppers

1 C. shredded monterey jack cheese

1 C. sour cream

2 C. chopped cilantro
  • chop onion and cook in pan with 4 tbs. butter until soft and transparent
  • remove onion and add 12 tbs. butter at medium heat
  • whisk in flour and continue to whisk for about 3 minutes. Add onion, chicken broth and half and half
  • bring to a boil and simmer until thickened
  • stir in seasonings
  • add beans, chilis, chicken and cheese
  • cook for 20 minutes, then add sour cream and cilantro

Spring/Summer Double-Sided Banner Workshop

I'm so excited about this workshop! I think you'll LOVE it. It uses one of my favorite products from the brand new Close To My Heart Spring/Summer Idea Book: the "My Creations Banner".

This darling banner (feel free to click on either photo to see them larger and in more detail) can be used for 6 months per year because on one side is says "Spring" and the other it says "Summer" (as you can see in the photos).

This workshop is scheduled for Tuesday, March 15 at my home in Highland, UT. There are 2 time slots to choose from:
  • 10 am - 1 pm
  • 7-10 pm
You can also participate in this workshop long distance. To do so, just add $5 to the shopping list prices you see below and I will send your workshop to you (as well as stamping your letters).

This workshop is another in my "Double Your Fun" series. What that means is that when you purchase a workshop, you get everything you need to complete 2 full banners. You can make 2 yourself and keep one and give one away as a gift, or you can split the workshop cost with a friend and then each of you will get a banner to take home. Pretty Cool!

Each banner piece is approximate 6" across and 7" long. That means, it stretches over a yard in length when finished and put together. It is PERFECT to hang across the front of a mantle, an entry way, a door way, across the top of a window, etc.

To attend (or participate long-distance) all you are required to purchase is the Basic Kit. One item that is in the Better Kit that I think really makes a difference in the project is the Ribbon. You are more than welcome to add that to the Basic Kit without having to purchase the whole Better Kit if you'd like. If you are participating long-distance, I strongly suggest you purchase the Better Kit.

Last Week...

Last week was wonderful! We went to the BYU production of Peter Pan in which Daysha played Tiger Lilly. She was awesome!

Tannon finally got to Spain. WOO HOO! He's going to be such a great missionary there.

I found some pictures of Dawson at his 'disco skating night'. Blurry, but at least someone took a couple of photos. Too funny!

Kori and Daci came to visit from Chicago.

Easton and Daysha were here spending time too.

GOOD TIMES! Dan-the-Man and I couldn't feel more blessed!

Mayberry Cards and Layouts

When you hear the word "Mayberry," what do you think of? For me, until just recently it brought to mind memories and visions of Andy Griffith, Aunt Bea, Opie and the gang. Not anymore! Close To My Heart has knocked my socks off with this BEAUTIFUL new paper kit called Mayberry. It deliciously blends the Close To My Heart exclusive colors of sorbet, cocoa, honey and olive (are you hungry yet?). It debuts in the brand new Spring/Summer 2011 Idea Book on February 1 (which you will be able to view page by scrumptious page right here on my blog that day).

I am having so much fun with this paper pack and couldn't wait until February 1 to share these projects with you! I thought the colors and patterns PERFECTLY complimented these photos of Daci playing in the leaves back in 2009. I hope you enjoy my projects. Hint: remember those AMAZING new Kraft Color Ready borders I talked about in my last post...well, you MIGHT just see a few more on these projects! As always, just click on any photo to see it larger and in more detail.

Have a wonderful Saturday! I'm off to clean. Blech! I'd MUCH rather play some more with Mayberry! Here are some close ups of the projects for your enjoyment:
